Role Description The Butcher Assistant role at IHCL in South Goa, Palolem, Canacona is a full-time, on-site position supporting the kitchen and culinary operations. This role involves assisting with the receiving, storing, and preparation of meats and poultry, including trimming, portioning, and packaging in accordance with established standards. The individual will help maintain high hygiene levels, ensure quality and freshness of products, and follow food safety and sanitation procedures at all times. Daily tasks include labeling and organizing inventory, coordinating with chefs on specific cut and portion requirements, and supporting accurate stock rotation to minimize waste. The role also requires clear communication with kitchen team members, occasional interaction with internal customers such as restaurant staff, and adherence to IHCL's standards of service and safety.

Qualifications

• Strong practical skills in butchery, including cutting, trimming, portioning, and safe handling of meats.
• Effective communication skills to coordinate with chefs, kitchen staff, and other team members.
• Customer service mindset when supporting internal stakeholders and ensuring timely, accurate product preparation.
• Knowledge of hygiene and food safety practices, including proper sanitation, storage, and cross-contamination prevention.
• Attention to quality control, ensuring freshness, correct labeling, and compliance with IHCL standards.
• Previous experience in a hotel, restaurant, or professional kitchen environment is preferred.
• Ability to work on-site in Panaji, including standing for extended periods and handling physical tasks safely.
• Basic education with vocational training in culinary arts or meat processing is an advantage.
