Wok/Chinese Chef- Senior CDP/ Jr. Sous Chef

Role & responsibilities

• Prepare a wide range of Chinese dishes, including stir-fries, noodles, fried rice, gravies, and other wok-based preparations.
• Demonstrate proficiency in high-heat wok cooking, flame control, and quick cooking techniques.
• Have a thorough understanding of Chinese sauces, marinades, seasonings, and flavour profiles.
• Ensure consistency in taste, portion size, food quality, and presentation.
• Manage daily mise en place, ingredient preparation, and workstation readiness.
• Maintain food safety, hygiene, and sanitation standards at all times.
• Monitor ingredient quality, minimise wastage, and ensure efficient utilisation of kitchen resources.

Preferred candidate profile

• Proven experience as a Wok Chef or Chinese Chef in a restaurant, hotel, or Pan-Asian dining establishment.
• Strong knowledge of Chinese cuisine and traditional wok cooking techniques.
• Expertise in preparing noodles, fried rice, stir-fried dishes, and Chinese sauces and gravies.
• Good understanding of Chinese ingredients, seasonings, and flavour balancing.
• Ability to work efficiently under pressure while maintaining food quality and consistency.
