R&D - Cookies

*Key Responsibilities:*

1. Product Development and Innovation:

1.1. Lead New Product Development (NPD) by formulation, re-formulation initiatives across bakery and confectionery portfolios.

1.2. Develop and optimize recipes, formulations, textures, flavors and appearances.

1.3. Drive innovations in healthier variants (low sugar, high protein, trans fat free etc.).

1.4. Benchmark competitors to strengthen innovation pipelines.

2. Process Development and Commercialization:

2.1. Lead pilot trials, plant trials and commercial -scale launches.

2.2. Optimize baking, proofing, mixing, extrusion, tempering, moulding, cooling and packaging processes.

2.3. Ensure seamless technology transfers from R&D to manufacturing.

2.4. Work with production team to improve process efficiency, yield and consistency.

3. Quality, Food Safety and Regulatory Compliances:

3.1. Ensure compliance with FSSAI, Food Safety standards, labelling regulations and internal quality norms.

3.2. Define product specifications, SOPs and critical quality parameters.

3.3. Lead shelf-life studies, sensory evaluation and stability testing.

3.4. Support QA in addressing product related complaints, deviations and audits (Internal/external).

4. Cost Optimization and Value Engineering:

4.1. Drive formulation and process changes to optimize cost without compromising quality.

4.2. Identify alternate ingredients, suppliers and technologies.

4.3. Prepare input BOMs, cost models and feasibility studies for new products.

*Requirements:*

- *Education:* Bachelor's/Master's degree in Food Science, Food Technology.

- *Experience:* 8-10 years of experience in R&D, preferably in cookies and bakery industry.
