Role Overview

We are seeking a technically strong and result-oriented Plant Manager to manage the day-to-day operations of our molasses-based distillery. The candidate will be responsible for production planning, fermentation and distillation performance, utilities coordination, maintenance, product quality, safety, statutory compliance and manpower management.

Key Responsibilities

• Manage daily distillery operations including molasses handling, yeast propagation, fermentation, distillation, alcohol storage and utilities.
• Prepare and execute production plans to achieve targeted output, alcohol recovery and plant efficiency.
• Monitor molasses quality, fermentation efficiency, alcohol percentage, distillation parameters and process losses.
• Ensure optimum utilization of raw materials, steam, water, power, chemicals and other utilities.
• Identify production bottlenecks and implement corrective and preventive measures.
• Coordinate with ETP, boiler, maintenance, electrical, instrumentation and quality-control teams.
• Monitor plant downtime and ensure timely maintenance of critical equipment.
• Maintain process parameters and production records as per approved SOPs.
• Ensure compliance with safety, environmental, excise and pollution-control requirements.
• Monitor spent wash generation, storage, treatment and disposal in coordination with the ETP team.
• Supervise plant operators, shift personnel and production staff.
• Conduct regular production and safety reviews with the operating team.
• Ensure good housekeeping, safe work practices and proper PPE usage throughout the plant.
• Monitor inventory of molasses, chemicals, consumables and finished alcohol.
• Prepare daily, weekly and monthly production and efficiency reports for management.
• Support process improvement initiatives to increase yield and reduce operating costs.

Qualifications and Experience

• Degree/Diploma in Chemical Engineering, Chemical Technology, Industrial Chemistry, Alcohol Technology or related discipline.
• 2–5 years of relevant experience in a molasses-based distillery.
• Good knowledge of fermentation, distillation, alcohol recovery and utility systems.
• Understanding of distillery equipment, process troubleshooting and production control.
• Knowledge of safety, environmental and excise requirements applicable to distillery operations.
• Good leadership, communication, planning and problem-solving skills.
