Role Overview

We are looking for a technically capable Plant Incharge to supervise production activities at our molasses-based distillery. The candidate will be responsible for monitoring fermentation, distillation, utilities, manpower, process parameters, production targets and coordination between different plant departments.

Key Responsibilities

• Supervise daily production activities of the molasses-based distillery.
• Monitor molasses preparation, yeast propagation, fermentation and distillation operations.
• Ensure adherence to approved process parameters and SOPs.
• Monitor fermentation time, temperature, pH, alcohol percentage and fermentation efficiency.
• Monitor distillation parameters and alcohol recovery.
• Ensure production targets and quality requirements are achieved during each shift/day.
• Coordinate with boiler, ETP, maintenance, electrical, instrumentation and laboratory teams.
• Monitor availability of steam, water, power and other utilities.
• Identify abnormal plant conditions and initiate immediate corrective actions.
• Minimise alcohol losses, production losses and process downtime.
• Ensure smooth plant start-up, operation and shutdown activities.
• Monitor raw-material and chemical consumption.
• Maintain daily production, consumption and process records.
• Allocate work to operators and supervise shift activities.
• Ensure sufficient manpower is available for continuous plant operations.
• Conduct shift handover and ensure proper communication of operational issues.
• Monitor plant equipment condition and raise maintenance requirements.
• Ensure compliance with safety procedures, PPE requirements and work-permit systems.
• Maintain proper housekeeping throughout the production area.
• Support Plant Manager in production planning, troubleshooting and efficiency improvements.
• Prepare daily production and plant-performance reports.

Qualifications and Experience

• Diploma/Degree in Chemical Engineering, Chemical Technology, Chemistry, Alcohol Technology or related discipline.
• 2–5 years of experience in molasses-based distillery/ethanol plant operations.
• Strong understanding of fermentation and distillation processes.
• Knowledge of distillery utilities and process equipment.
• Ability to handle production teams and shift operations.
• Good knowledge of process troubleshooting and production documentation.
• Basic knowledge of environmental, safety and excise requirements.
• Good communication, coordination and problem-solving skills.
