Position Title: - Manager/ Senior Manager Production Fresh Milk, UHT & Dairy Products

Location- Kanpur (UP)

Job Description

To manage and oversee the production operations of Fresh Milk, UHT Milk, and Value-Added Dairy Products, ensuring compliance with quality, food safety, productivity, cost, and regulatory requirements. The role is responsible for achieving production targets while maintaining the highest standards of hygiene, product quality, and operational efficiency.

Key Responsibilities

Production Planning & Execution

• Plan, coordinate, and monitor daily production activities for:
• Fresh Pasteurized Milk
• UHT Milk
• Flavored Milk
• Curd/Yogurt
• Butter
• Cream
• Dairy Beverages and other value-added dairy products
• Ensure production schedules are achieved as per demand forecasts and sales requirements.
• Optimize production capacity utilization and reduce downtime.
• Monitor production yield and losses, implementing corrective actions where required.

Process Management

• Manage milk reception, standardization, pasteurization, homogenization, UHT processing, aseptic filling, and packaging operations.
• Ensure adherence to process parameters, SOPs, and quality standards.
• Monitor CIP (Cleaning-In-Place) and sanitation programs.
• Implement continuous improvement initiatives to enhance productivity and efficiency.

Quality & Food Safety

• Ensure compliance with FSSAI, HACCP, GMP, ISO 22000, BRC, and other food safety requirements.
• Coordinate with Quality Assurance for product testing and release.
• Investigate quality deviations, customer complaints, and non-conformances.
• Maintain strict hygiene and sanitation standards throughout production areas.

Team Management

• Lead and supervise production supervisors, operators, technicians, and contract workforce.
• Conduct training programs on production processes, quality, safety, and hygiene.
• Drive employee engagement, discipline, and performance management.

Maintenance Coordination

• Coordinate with Engineering and Maintenance teams for preventive and breakdown maintenance.
• Ensure maximum line efficiency and equipment availability.
• Participate in commissioning and installation of new equipment and production lines.

Cost Control & Productivity

• Monitor and control manufacturing costs.
• Minimize milk losses, wastage, and packaging material consumption.
• Track key performance indicators (KPIs) including:
• Production Efficiency
• OEE (Overall Equipment Effectiveness)
• Yield Recovery
• Line Utilization
• Downtime
• Rework and Rejections

Inventory & Material Management

• Coordinate availability of raw milk, ingredients, cultures, packaging materials, and consumables.
• Monitor inventory levels to avoid shortages and excess stock.
• Ensure proper FIFO/FEFO practices.

Compliance & Documentation

• Maintain production records, batch records, and traceability documentation.
• Ensure compliance with statutory, environmental, and safety regulations.
• Support internal and external audits.

Health, Safety & Environment

• Promote a strong safety culture.
• Ensure adherence to EHS policies and safe work practices.
• Conduct risk assessments and implement corrective actions.

Educational Qualification

• B.Tech / B.E. in Dairy Technology, Food Technology, Mechanical Engineering,Production Engineering, or related field.

Experience

For Large Dairy Plants

• 8-15 years of experience in dairy manufacturing.
• Minimum 3-5 years in a managerial production role.
