Deputy Manager

Objective of the Role:

To manage and supervise the distillery production operations, ensuring smooth and uninterrupted plant operations, optimum production with consistent quality product, efficient utilization of raw materials.

Key Responsibilities:

1. Distillation & Evaporation Operations

• Manage day-to-day distillation operations to ensure uninterrupted and efficient plant functioning.
• Ensure optimum production with required quality standards. Monitor GNS quality and take corrective action wherever required.
• Monitor production parameters and take corrective action in case of process deviations.

2. Liquefaction & Fermentation Process Control

• Monitor liquefaction & fermentation operations and maintain consistency in process parameters.
• Ensure proper handling of grain and other raw materials used in the process.
• Ensure optimum enzyme dosing, temperature, pH and other critical process parameters.

3. Production Planning & Monitoring

• Maintain daily production, recovery and process-loss records.
• Review production data and identify areas for improvement.
• Ensure timely reporting of production performance and deviations to management.

4. Quality & Lab Coordination

• Ensure quality checks of incoming raw materials related to distillery operations.
• Monitor quality parameters of raw materials, fermented wash, spirit and by products.
• Coordinate with the laboratory/quality team for routine analysis and reporting.
• Ensure consistency in product quality and compliance with prescribed specifications.

5. Process Improvement

• Identify opportunities for improving production efficiency, recovery and yield.
• Drive continuous improvement in distillery production processes.

6. Documentation & Reporting

• Maintain production, process, quality and operational records.
• Maintain documentation related to production processes, process parameters and statutory requirements.

Educational Qualification:

• Degree in Chemical Engineering/Degree in Bio-Chemical Engineering.
• PG Diploma in Industrial Fermentation & Alcohol Technology (DIFAT) or equivalent technical qualification preferred.

Experience:

• Approximately 8-10 years of relevant experience in a grain-based distillery, preferably with hands-on experience in grain handling, milling, liquefaction, fermentation, distillation, evaporation, dryer, and decanter operations.
